Once you connect, a new window will appear, the "mIRC Channels Folder":

Now that you are connected to the server, you must chose somewhere to go.  This is where the "mIRC Channels Folder" comes into play.  A channel (signified by #channelname) is a virtual chatroom of users.  There are already a bunch of channels to choose from that the software has included by default.  All the good channels have to be manually input into the dialogue box to the left of the add button.  To join me, other collectors, and scanners in channel asianscans simply type "#asianscans" in the dialogue box as noted above.  The hit the join button.

For easier future use, you should add this channel to your channels folder.  To do this, simply hit the "Add" button instead of the "Join" button. Then select the channel from the list and hit the "Join" button in the future.

Once you join the window the channel dialogue box will appear, which appears like this under default settings:
